Hong Kong BBQ
Graze on a selection of traditional Hong Kong BBQ meats including Peking duck, Soy chicken, BBQ pork, Roast pork and Quail. Served with lap cheong sausage, steamed rice, pickled vegetables, garlic and shrimp crackers, soy roasted nuts, chilli soy eggs, fermented chilli and assorted condiments.
Live Oyster Shucking
A chef shucking live Tasmanian oysters and serving on a glass plate of rock salt with fresh wakami salad, mignonette, lemon cheeks and salmon pearls.
A selection of whole wheel, locally-made and imported cheeses, non pasteurized where possible, presented on an antique-style timber table. Served with antique copper pots of fruit pastes, Australian bush honey & silver platters of oat cookies, lavosh and crackers. Self-serve with antique brass cheese knives and small plates.
A selection of preserved meats & cured sausages, served alongside pâté, rillette & terrine, seasonal fruits, pickled vegetables and crackers.
Make your own tacos with various fillings of pork belly, baja-style fish & fried cauliflower, chipotle coleslaw, pico de gallo and pickled carrots. Topped with either guacamole & Jalapeno crema and served with fresh corn tortillas.
Create your own bowl of Ramen, with a choice of meat-based broth & miso broth, roast pork, shredded green tea smoked chicken, tofu puffs, seasonal vegetables, udon noodles and 63 degree boiled eggs. Topped with nori and self-served in a round bowl with chopsticks and traditional soup spoons.
Beautifully styled grazing table featuring charcuterie options, firm & soft cheeses, pickled vegetables and seasonal fruit & dried fruit. Served alongside assorted dips, marinated olives, crackers and various nuts.
A colourful mixture of fresh seasonal fruit & dried fruit, veggie crudités, various nuts, plant-based dips, dairy-free chocolate and crackers. Served in a mixture of terracotta bowls and copper pots.
Half-wheel or whole wheels of Raclette melted and poured on top of a choice of slice charcuterie, seasonal crudités, crusty baguettes and steamed baby potatoes.
