6 x Roma Tomatoes, diced;
1 x Peeled Cucumber, diced;
1 x Red Onion, diced;
1 x Preserved lemon, diced;
2 x garlic cloves, chopped;
4 x Tablespoons of cumin;
1 x Green Chilli, diced;
1/2 x Mint bunch;
1/2 x Parsley bunch, roughly chopped;
1/2 x Basil bunch roughly chopped;
3 x Lemons, juiced roughly chopped;
200g x Bourgal, soaked in hot water until cooked;
Salt and Pepper.
Combine all dry ingredients, then add lemon juice and EVOO until desired consistency is achieved. Adjust seasoning.
